B.J.'s Cooking's a Crock

B.J. loves to cook. But, like most of us, he has a really busy schedule. B.J. thinks that is no reason not to have wonderfully delicious meals. The answer A CROCK (slow cooker)! B.J.'s Radical Roast

3-5 lb.beef or pork roast (depending on appetite, family size, or both!)
3-5 baking sized potatoes (peeled and cut up into chunk size pieces)
baby carrots(you decide quantity)
2-4 medium onions (peeled and quartered)
4 tablespoons worcestershire sauce
4 tablespoons soy sauce
1/2 teaspoon basil
1/2 teaspoon basil
1/4 teaspoon paprika
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 1/2 cups water
2 teaspoons seasoned salt
 

Wash roast throroughly. Fork both sides vigourously. Mix water, soy sauce, worcestershire sauce, basil, oregano, paprika, ground black pepper, garlic salt, and seasoned salt well in a measuring cup or bowl. Put half of prepared vegetables in bottom of slow cooker. Add roast to slow cooker. Pour liquid mixture over roast in slow cooker. Add other half of prepared vegetables. Cook on low setting 7-12 hours. Actually a meal in itself. Might add bread of choice and dessert.

 

B.J.'s Cluck and Oink with Rice

2 lbs. boneless/skinless chicken (white, dark, or mixed)-cut up
1 lb. smoked sausage, cut in 1-inch pieces
2 green bell peppers, coarsely chopped
2 large onions, coarsely chopped
1 cup sliced celery
1 (14 1/2-oz.) can diced tomatoes, undrained
2 tsps. chicken-flavored bouillon granules
1 tsp. thyme
1 tsp. garlic powder
1/2 tsp. ground black pepper
2 cups instant rice
 
Rinse chicken and pat dry. In slow cooker, place sausage, peppers, onions, celery, tomatoes, bouillon, thyme and garlic powder. Stir to blend well.
Top with chicken and sprinkle with black pepper. Cover and cook on Low for 8 hours or until chicken is done and vegetables are tender.
Add rice; stir gently, yet thoroughly to blend. Cover and cook 15-20 minutes or until rice is tender. A nice addition might be a fresh garden salad.

 

B.J.'s Fantastic Fajitas

2 lbs boneless/skinless chicken
2 large onions, thinly sliced
2 red or green bell peppers, sliced
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
4-8oz. chicken broth
1 tablespoon fresh lemon juice
8-10 warm flour tortillas
1/2 cup shredded cheddar cheese (or as much as you need)
lettuce and tomato as desired
 
Cut chicken across the grain into 1/2 inch diagonal strips. Place in a slow cooker.
Top with onion, bell pepper, and lime. In a small bowl, combine chili powder, cumin, salt, and broth. Pour mixture over chicken.
Cover and cook on LOW for 7 to 9 hours or until chicken is tender.
Spoon several slices of chicken mixture with sauce into center of each warm tortilla. Fold over. Top with sour cream, cheese, lettuce and tomatoes (and if you're like me... guacamole). You might serve with spanish rice and/or refried beans.

 

B.J.'s Nawleans Chicken with Rice

2lbs. Chicken (white, dark, or both)
paprika
salt and pepper
2 large chopped onions
2 large chopped green peppers
1/2 cup chopped celery
2 cans stewed tomatoes
2 cans sliced mushrooms, drained
1/2 teaspoon dried thyme
Fluffy rice (quantity varies on size of family)
 
Sprinkle chicken with paprika, salt and pepper. Place chicken in slow cooker. Mix remaining ingredients except rice and pour over chicken. Cover and cook on LOW setting for 7 to 9 hours. Remove chicken from sauce before serving. Serve sauce over hot fluffy rice. A fresh green salad is a nice addition.

 

B.J.'s Coca-Cola Chicken

2 lbs. boneless chicken - (white, dark, or both)
salt - to taste
ground black pepper-to taste
2 cups ketchup
2 large onions - thinly sliced
.5 liter (16.9oz.)Coca- Cola (normally sold in plastic bottles)
 
Wash and pat chicken dry. Salt and pepper to taste. Put chicken in crock-pot with the onions on top. Add cola and ketchup and cook on LOW 6 to 8 hours. Enjoy! You might serve with your choice of vegetables or salad.

 

B.J.'s Lemon Herb Chicken with Pasta

2lbs. boneless/skinless chicken (white, dark, or both)-cut up in chunks
1 packet Lemon Herb Sauce mix
2 small zucchini squash- halved, and sliced 1/4" thick
1 bunch green onions - sliced 1/2" thick
1/4 cup water
salt -- to taste
ground black pepper - to taste
1 cup frozen peas - thawed (or 10oz. pkg.)
hot cooked pasta - (qty depends on number served...your choice of type)
1/2 cup whipping cream
 
Wash chicken pieces; combine with squash, green onions, sauce mix, and water in crock pot; salt and pepper to taste. Cover and cook on LOW 5 to 7 hours; add peas during last 15 minutes. Add hot pasta and cream last 5 minutes. Salad and bread tops this off!

 

B.J.'s Chicken and Cheese Casserole

2 lbs. chicken (white, dark, or both)-cut up
1 pkg. cream cheese
1/2 lb. Cheddar cheese, shredded
1 pkg. frozen broccoli
2 large onions-chopped
1 can mushrooms - (4 oz) -- drained
1 cup chicken broth
2 cups milk
1 can Cheddar cheese soup
1 teaspoon garlic salt
Paprika - to taste
1 teaspoon black ground pepper
1 pkg. noodles
 
Spread half the chicken in the crockpot. Top with mushrooms, onions and broccoli. Arrange remaining chicken on top. In a bowl mix milk, broth, cheese soup, cheeses, spices. Stir still mixed and smooth. Cover and cook on LOW for 7 to 9 hours.
Serve over noodles when done. This is a pretty heavy, filling dish. Might consider a light green salad.

 

B.J.'s Sugar Baby Darlin' Dumplins

2 lbs. boneless, skinless chicken (white, dark, or both)-cut up
1 large potato, peeled and cut into 1/2" pcs. (1 1/2 cups)
2 med. carrots, sliced (1 cup)
1 can (14 1/2 oz.) chicken broth
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon pepper
1 pkg. (10 oz.) frozen green peas, thawed
1 1/2 cups Original Bisquick
1/2 cup milk
Paprika, if desired
 
Place potatoes and carrots into slow cooker. Mix broth, flour, salt, basil and pepper; pour into slow cooker. Add chicken.
Cover and cook on low 7-9 hrs. or until juices of chicken is no longer pink when centers of thickest pcs. are cut. Stir in peas. Cover and cook on HIGH 15 min.
Mix Bisquick and milk until Bisquick is moisteened. Drop by spoonfuls onto chicken mixture. Sprinkle with paprika. Cover and cook on HIGH about 20-30 min. or until dumplins are done. This is a self contained meal. Might consider B.J.'s Crock Cobbler for dessert.

 

B.J.'s BBQ Ribs

4 pounds boneless country style pork spareribs - trimmed of fat
1 1/2 cups prepared hickory-flavored bbq sauce
1/2 cup apricot jam
1 tablespoon soy sauce
 
In a medium bowl, mix together 3/4 cup bbq sauce, the jam, and soy sauce until well blended. Place a layer of the ribs in slow cooker. Pour on 1/3 of the sauce mixture. Top with another layer of ribs and half the remaining sauce. Top with the remaining ribs and pour on the remaining sauce. Cover and cook on low 8 1/2 to 9 hours, or until the ribs are tender but not completely falling apart. Remove the ribs to a serving dish. Skim off and discard any fat from the sauce in the slow cooker. Stir in the remaining 3/4 cup bbq sauce. Pass the sauce to spoon over ribs. Corn on the cob and B.J.'s Smashed Potatoes top this off!

 

B.J.'s Coca-Cola Chops

4 pounds pork chops or short ribs (the leaner the better and boneless or de-boned)
2 tablespoons shortening
.5 liter Coca-Cola (16.9oz.)
1 cup catsup
1/2 cup vinegar
2 teaspoons salt
1/2 teaspoon pepper
2 teaspoons chili powder
1/4 cup worcestershire sauce
2 teaspoons garlic salt
 
Place chops in slow cooker. Combine Coca-Cola, catsup, vinegar, salt, pepper, chili powder, worcestershire sauce and garlic in bowl; mix well. Pour over chops;cook on LOW 7-9 hours, turning occasionally. Great with B.J.'s Smashed Potatoes!

 

B.J.'s Picante' Pork

3-4 pound pork boneless loin roast, cut into 1-inch pieces
1 jar (20 oz.) salsa
1 jar (20 oz.) picante' sauce
1 can (4 oz.) chopped green chilies, drained
1 can (15 oz.) black beans, rinsed and drained
1 cup shredded Monterey Jack cheese (4 oz.), if desired
 
Mix pork, salsa, picante' sauce and chilies in slow cooker.
Cover and cook on low for 6 to 8 hours or until pork is tender. Stir in beans. Cover and cook about 5 minutes or until hot. Sprinkle with cheese. Some sort of spanish or mexican rice is yummy with this.

 

B.J.'s Chicken or Pork Italiano

2 lbs. boneless/skinless chicken or 2 lbs. lean pork chops (can be whole or cut up)
1 large onion - chopped
1/2 cup halved pitted ripe olives
2 medium green, yellow, or red peppers-chopped
8 oz. sliced mushrooms (fresh or canned)
1 can (14.5 Oz.) diced tomatoes - undrained
1 teaspoon oregano
1 tablespoon parsley
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried rosemary
1/2 teaspoon basil
1/2 teaspoon black pepper
1/2 cup water
1 tablespoon cornstarch
 
Place meat in slow cooker. Top with onion, olives, peppers, and mushrooms. Mix tomatoes,oregano, salt, rosemary, parsley, basil, black pepper, and garlic salt in a bowl and pour over meat. Cover and cook on low for 7-9 hours.
Remove meat and vegetables from slow cooker with slotted spoon; place on serving platter. Cover to keep warm.
In small bowl, combine water and cornstarch; blend well. Add to slow cooker. Increase setting to high; cook until thickened to make sauce. Serve with meat immediately over rice or pasta. A caesar's salad is a nice addition.

 

B.J.'s Spaghetti Suprise

6 italian sausage links -- cut into 1" pieces
1lb. boneless/skinless chicken, cut in 1 inch cubes
3 large onions (Vidalia if available)- chopped
3 medium green bell peppers- chopped
2 (4 oz.) cans mushroom stems and pieces, drained
3 tablespoons sugar
1 1/2 teaspoon dried basil leaves
1 1/2 teaspoon dried oregano leaves
1/4 ts nutmeg
1/2 teaspoon salt
1 teaspoon ground black pepper (best fresh ground from mill)
1 1/2 teaspoon Garlic powder
2 jars favorite spaghetti sauce
1 28 oz. can crushed Tomatoes -- undrained
1 15 oz. can tomato sauce
1 12 oz. can tomato paste
hot cooked spaghetti
 
In slow cooker, combine all ingredients except spaghetti; mix well.
Cover; cook on low setting for 6 to 8 hours. Skim and discard fat, if desired.
About 30 minutes before serving, cook spaghetti to desired doneness as directed on package. Drain. Serve sauce over spaghetti. Garlic bread and your choice of salad finishes this off!

 

B.J.'s Crock Cobbler

32 oz. peaches, apples, cherries, strawberries, blueberries, or blackberries (fresh or canned)
2/3 cup oats
2/3 cup all-purpose flour
2/3 cup light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup softened margarine
 
Place fruit in crock pot. Combine oats, flour, sugar, and spices. Add butter and stir until crumbly. Pour mixture over fruit. Cook on low 3 hours. Wonderful and easy!

 

B.J.'s Crock of Chocolate

1 package chocolate cake mix
8 ounces sour cream
1 cup water
4 eggs
1 package (4-serving size) chocolate flavor instant pudding mix
1 cup chocolate chips
 
Lightly PAM inside of slow cooker. Combine cake mix, sour cream, water, eggs and oil in large bowl until well blended. Stir in pudding mix until well blended. Stir in chocolate chips. Pour mixture into slow cooker. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours. Serve hot or warm with ice cream if desired. ( and who doesn't desire ice cream?)
